Ingredients (for approx. 8 people)
- 2 liters of milk
- 2 tablespoons lemon juice
- A pinch of salt
- Nigella Sativa Seeds (Black Cumin)
Preparation time: about 30 minutes
Preparation
1. Bring milk to the boil
- Pour the milk into a large pot.
- Heat the milk slowly, stirring continuously so that nothing burns.
2. Allow the milk to flocculate
- Once the milk is boiling, remove the pan from the heat.
- Add the lemon juice and continue stirring until the milk begins to curdle. The solid components (protein) separate from the whey.
3. Strain cheese
- Line a sieve with a damp cheesecloth and pour the milk mixture into it.
- You can use the whey that is left over to make quark, for example.
4. Squeeze out cheese
- Gently squeeze the cheese mixture in the cheesecloth. Be careful, the mixture could still be hot!
- The harder you press, the firmer the cheese will be.
5. Refine cheese
- Let the cheese rest for about 1-2 hours so that the remaining whey can drain off.
- You can then refine the cheese with salt and black cumin seeds as desired.
Tips
- You can also use raw milk for an extra authentic taste.
- The leftover whey can be used for other recipes, for example to make quark.
